Reason #987 to be jealous of Blue Ivy Carter: her awesome rainbow birthday cake.
Beyoncé and Jay Z gave a glimpse into their daughter’s 3rd birthday celebration when Beyoncé shared a photo of her giant snowflake ice sculpture and six-layer multi-colored cake on Instagram.
The overhead shot of Blue — who wore a pink dress adorned with bows to celebrate her big day on Jan. 7 — digging into the colorful cake got us hungry to recreate it at home.
Luckily, Rosanna Pansino, the baker and star of the YouTube cooking show Nerdy Nummies, created a do-it-yourself video for a similar dessert.

Rosanna Pansino’s Rainbow Cake
Makes 1 cake
3 boxes white cake mix
3 cups water, divided
9 egg whites, divided
1 cup vegetable oil, divided
Rainbow food coloring
Vanilla frosting
1. Preheat oven to 350°. Grease two 18-inch round cake pans with baking spray.
2. Combine 1 box cake mix with 1 cup water, ⅓ cup oil and 3 egg whites in a large bowl and whisk until blended. Separate half of batter into another large bowl. Mix purple food dye into one bowl and blue food dye into the other. Mix until the color is fully incorporated.
3. Pour batter from large bowls into pans. Bake for 35 minutes or until knife inserted in center comes out clean.
4. Repeat steps 2 and 3 two more times with green, yellow, orange and pink food dyes, spraying the pans before baking each layer.
5. Let cakes cool completely before frosting. Start with purple layer on the bottom and frost the top of each layer, stacking in rainbow order. Then frost on the sides and top of cake.
